Melinda Van Eeckhout

Melinda, Dipl. OM, LAc, holds NCCAOM licensure in Minnesota and Wisconsin. She 

is currently studying a Pulse Balance System taught by Martha Lucas, Ph.D L.Ac, founder of Mei 

Zen cosmetic acupuncture. Before completing a Masters of Science in Oriental Medicine, she spent 

17 years as a professional chef in the Twin Cities encouraging the consumption of organic, 

healthful food. She was co-owner of the critically acclaimed Auriga restaurant for 10 years before 

leaving to raise a family and pursue her lifelong interest in Chinese medicine. She lives with her 

family in western Wisconsin, where they own and operate Hog's Back Farm, a certified organic 

farm which supplies vegetables to more than 250 families in the Twin Cities. Her experience with 

food, farming and being a catalyst for healthful change in others has left her with a deep 

understanding of complex systems; systems of food, the body and the earth. Traditional Chinese 

Medicine, as a pattern medicine, analyzes the whole body with the intention of bringing the body's 

systems into balance. Acupuncture, herbal medicine, and supporting therapies address both the 

physical aspects of our person and our vital life force, or Qi.
